Surf Lodge Diary: 4th entry

And again, I have to say: what a day!

In morning, the surf was just perfect for us as beginners. Some proper waves rolled in and all of us were able to catch loads of waves and improve our skills in the water very. After that epic morning surf session we headed back to the lodge where the house cook  surprised us with the most delicious vegan pancakes I’ve ever had in my life with homemade apple sauce (Recipe you may find on the button). We sat on the deck, it wasn’t windy at all and the sun was shining on our faces during breakfast and talking about everyone’s improvements in their surfing.

After that we all went into serious chill-mode at the lodge and enjoyed the peaceful atmosphere by sunbathing, reading, swimming, playing cards and listening to Donavon Frankenreiter’s epic relaxed music. “It’s so effortless here!” said Patrick, one the guests from Switzerland. “It’s so nice to just have the time to do everything but you can also just do nothing. To simply enjoy the mere pleasure of ‘having time’!”

Afternoon came, as we went out for a little “broke back ocean adventure”. We arrived at the stables where Hilmary, the owner of Featherfoot Beach Horse Trails, welcomed us all and introduced each of us to our own horses that we will be riding. Mark-Kevin got the oldest mare named Twist, Patrizia got Trishka and I got a very kind gelding named Merlin.

The ride was just perfect. No wind, no clouds, no rain. A perfectly warm sunset horse ride. Near the end of the trail, the more experienced riders among us were allowed to gallop along the beach, which was indeed the highlight of the trail, leaving us with that absolute amazing feeling of pure freedom. After two hours of riding we arrived back at the farm, took some selfies with our horses and said our goodbyes with lots us hugs and kisses.

All the other lodge mates were waiting for us at Nina’s Restaurant where we were to dine that evening. Nothing like the Monday night curry buffet and drinks at such a lovely establishment to top off such an eventful day.

Now, I’m back in my cosy bed to get some well-earned shuteye and to this day I say cheers!


The Lovely Vegan Pancake recipe

“Lovely Vegan Pancakes“

400 g flour
500 ml almond milk
2 table spoons brown sugar
1 vanilla
1 tea spoon cinnamon
1 ripe banana
1 table spoon apple cider vinegar
1/2 pack backing powder
2 table spoons coconut oil

1. First mix the flour with the backing powder, vanilla, cinnamon and sugar
2. Mash the ripe banana and add it to the flour mix
3. Add apple cider vinegar and almond milk and mix it till it has a nice, smooth and little thick consistence after that add the coconut butter 4. heat up a pan on medium heat and add some coconut oil as well 5. back the pancakes until they have a nice and golden color

“Feeling like a child again apple sauce“

4 big apples
2 table spoons coconut oil
1 table spoon coconut sugar or honey or brown sugar (whatever you like)
300 ml orange juice
1 tea spoon cinnamon
1 vanilla

1. Dice apples walnut big
2. Put coconut oil in a pot and heat up on maximum heat
3. Add apple dices, coconut sugar or honey or brown sugar, cinnamon and vanilla and stir-fry until the apples get softer (don’t let them get burned!) 4. After approximately 10 minutes of stirring at the orange juice and put the lid on the pot
5. After another 15 minutes of simmering on medium heat put the whole apple mass into the blender and mix it to a saucy consistence
